Din-din (dinner)

So I made it through my first day of being Vegan! It was really hard because I was the only person at home today and there was absolutely NOTHING to eat for lunch, hence why I ate..... Cucumber, Carrot, Vita-Wheats and Sweet Chilli Sauce. Appetising! But it got so much better from their on, for dinner I made Ratatouille Pasta (Zucchini, Eggplant, Onion, Tomato) and for dessert I made Vegan Chocolate Cupcakes which taste AH-MAZ-ING! All in all it was really good food and much better than what I expected it to be like. Please excuse the really crappy photo of the Ratatouille, I took a quick one because I was so hungry I couldn't be bothered with trying to perfect it. And the recipe for the Cupcakes can be found below, I suggest everyone; Vegan, Vegetarian or Meat eater, try them, they are like moist chocolate moussey goodness!
